Golden Sweet Potato Zen Porridge
Warm up your winter morning with this Japanese plant-based, vegan-friendly sweet potato rice porridge. A simple 4-ingredient one-pot dish that’s naturally comforting.
150gsweet potato (ideally purple like Japanese one)
1/2tbspsalt
2tbspblack sesame seeds, for topping
Instructions
Wash the rice in a bowl with some water, then drain it with a colander. Repeat it 2 times.
Add 700ml of water and the drained rice into a medium pan.
Let the rice soak for 15 minutes. Meanwhile, wash the sweet potato well and cut it into 1 cm dice (No need to peel the potato. The dark-colored skin is beautiful and wholesome!).
Bring the pan to a boil over high heat, and add the sweet potato and salt. When it boils, gently stir and reduce the heat to low-medium and cover the pan with a lid. Simmer for 15 minutes.
Turn off the heat, and leave it for 10 minutes WITHOUT opening the lid. This step is crucial to get the rice nicely cooked in residual heat.
