Experimenting Japanese-Italian Marinated Mushrooms

I really enjoy “Japanizing” some international cuisines!

[How to cook]

Toss stir-fried tofu and mushrooms with a drizzle of olive oil.

Marinate it with salted-koji (shio-koji 塩こうじ)and a kelp-based noodle soup concentrate (めんつゆ).

Finish with a sprinkle of black olives and shichimi spice mix.


Below is what home-made salted-koji looks like.

As an alternative to salted-koji, you can use an equivalent or slightly less amount of white miso.
